VINIFICATION AND AGEING
Harvesting time in the worst ten days of August. Reductive vinification with soft pressing and subsequent long fermentation at a low temperature. Ageing in steel for 4 months.
Colour: straw yellow with light green reflections
Bouquet: fresh floral with strong notes of rose, citrus fruit and green apple. Flavour: intense and sapid, with pleasant hints of citrus fruit.
Baked or grilled fish, fish in sauce or casseroled fish.
Serve at 8°-12°C.
